Wild rice salad with dried pineapple, cherry tomatoes, avocado and lime dressing

Refreshingly sweet and nutty summer salad. Vegan, satisfying and full of colour.

Wild rice is an amazing ingredient that has a very nutty flavour and is full of proteins and healthy nutrients for your body.

  • Wild rice250  g
  • Dried pineapple20  g
  • Cherry tomatoes200  g
  • Avocado2  pcs
  • Lime1  pcs
  • Coriander20  g
  • Peanuts30  g

  • Olive oil

How to do:


  • Add the rice and the double amount of water to a pot and bring to a boil. Reduce the heat to medium/low heat, cover with a lid and let simmer for 35-40 Min. until tender. Stir occasionally and drain into a colander afterwards. Briefly rinse with cold water.
  • Meanwhile, clean and cube tomatoes. Pit, peel and cube avocado. Drizzle with some lime juice to prevent from discoloring. Coarsely chop peanuts and coriander.
  • Combine wild rice, tomatoes and avocado in a bowl and fold in 2-3 tbsp. olive oil and some lime juice. Season to taste with salt and pepper.


  • Add the wild rice salad to bowls and top with dried pineapple, coriander and peanuts.
