Warming Comfort Food

When it's rainy outside it's time to prepare some comfort food and snuggle in with your sweetheart. 

This week we're having a classic Avocado winter recipe for you: Shakshuka.

Ingredients

  • A jar of peeled tomatoes1  pcs
  • A box of 4 eggs1  pcs
  • Cedar nuts10  g
  • Flat parsley20  g
  • Eggplant1  pcs
  • A jar of chickpeas1  pcs
  • Red bell pepper1  pcs

  • Salt
  • Pepper
  • Olive oil
  • Garlic cloves2 pcs
  • Cayenne pepper1 pinch
  • Dried herbs de Provence0.5 tsp.

How to do:

Instructions

  • Preheat the oven to 210°C (fan). Peel and finely slice garlic cloves. Clean and cube bell pepper and eggplant. Mash the peeled tomatoes with a fork. Drain and rinse the chickpeas.
  • Heat some olive oil in a larger pan and sauté garlic, bell pepper and eggplant for 5 min. on medium heat. Deglaze with mashed tomatoes and stir to combine. Fold in dried herbs de Provence and chickpeas and let simmer for 5-7 min. Season to taste with salt, pepper and a pinch of cayenne pepper afterwards. Hollow out a smaller depression for each egg. Break the eggs into the pan and transfer the whole pan to the hot oven. Bake until the egg is set to your liking.
  • Meanwhile, wash, dry and finely chop parsley. Coarsely chop cedar nuts.
  • TIP: Peel the bell pepper before cutting it to make it more digestible.

Serving

  • Carefully remove the pan from the oven and place in the middle of the table. Sprinkle with chopped parsley and cedar nuts. Enjoy while hot.
