Veggie Style Carbonara

Enjoy the classic carbona recipe in a vegetarian version with an extra twist.

  • Spelt spirelli pasta500  g
  • Ricotta1  pcs
  • Eggs2  pcs
  • Romanesco1  pcs
  • Shallots1  pcs
  • Crème fraiche1  pcs
  • A bunch of basil1  pcs
  • Garlic bulb1  pcs

Good to have at home

  • Salt
  • Pepper
  • Olive oil

How to do:


  • Clean the romanesco and divide into florets. Peel and chop 2 garlic coves and shallot. Wash, dry and finely chop basil.
  • Cook the romanesco florets for 2 min. in boiling water. Drain and rinse afterwards. Set aside.

Spelt spirelli pasta

  • In a large pot, bring a generous amount of water with 1 tsp. salt to a boil. Add the pasta and cook until al dente.

Veggie carbonara with romanesco and ricotta

  • In a bowl, combine ricotta and eggs.
  • Heat some olive oil in a pan and sauté garlic and shallot for 2-3 min. on medium heat. Add romanesco and sauté for another 2-3 min.
  • In the large pot, combine shallot, garlic, romanesco, the ricotta mixture and spirelli pasta. Slowly heat until set to your liking. Season to taste with salt and pepper.


  • Arrange the veggie carbonara Romanesco and ricotta on plates and sprinkle with chopped basil.
