Vegan tofu burgers!

This week we have created a juicy and vegan burger recipe which will satisfy both the meat-eaters and vegans in your family. 

The recipe is part of the Vegan Box and the Vegetarian Box Week 24. The box contains ready-to-bake spelt buns for you to bake at home.

  • Smoked tofu2  pcs
  • Avocado1  pcs
  • A package of spelt buns1  pcs
  • A package of red sprouts1  pcs
  • Cherry tomatoes300  g
  • A jar of white beans1  pcs
  • Red onions1  pcs

Good to have at home

  • Salt
  • Pepper
  • Olive oil
  • Lemon juice
  • Ground cumin0.5 tsp.

How to do:


  • Bake the spelt buns according to packaging instruction.
  • Drain and rinse the white beans. Peel the red onion and cut it in half. Add the white beans, half the red onion, a dash of lemon juice and ground cumin to your food processor and pulse until smooth. Season to taste with salt and pepper. Cut the remaining half of the red onion into thin slices.
  • Cut the tofu into slices. Heat a dash of olive oil in a large pan and fry the tofu slices on high heat until well browned and crisp. Set aside on kitchen paper afterwards.
  • Wash and slice the cherry tomatoes. Pit, peel and slice the avocado. Drizzle the avocado slices with some lemon juice to prevent from discoloring.

Rich tofu burgers with avocado and sprouts topping

  • Halve the spelt buns and spread both parts with white bean spread. Top the bottom part with pan-fried tofu, cherry tomatoes, red onion slices and avocado. Season with a pinch of salt and pepper if desired. Add the red sprouts and the top part of the bun. Slightly press on.
  • Arrange on plates.
