Vegan apple strudel with marzipan and whipped vanilla cream

  • Puff pastry1  pcs
  • Apples600  g
  • Lemon1  pcs
  • Dried soft prunes50  g
  • Ground hazelnuts25  g
  • Almonds30  g
  • Soy whip cream1  pcs
  • Ground vanilla1  g
  • A package of marzipan1  pcs

Good to have at home

  • Sugar1 tbsp.
  • Maple syrup30 ml
  • Ground cinnamon1 tsp.
  • Coconut oil1 tsp.

How to do:


  • Cut the dried prunes into smaller pieces and coarsely chop almonds. Crumble the marzipan into a larger bowl. Grate 1 tsp. lemon peel. Wash, core, peel and finely cube the apples. Drizzle with some lemon juice to prevent from discoloring. In the bowl, combine apples, lemon zest, dried prunes, ground hazelnuts, almonds, ground vanilla, marzipan, ground cinnamon and maple syrup. Combine with your hands.

Vegan apple strudel

  • Preheat the oven to 200°C.
  • Unpack the puff pastry and top one half with the prepared stuffing. Fold in the sides and roll the dough over the filling. Carefully transfer onto a lined baking tray and brush with coconut oil. Transfer to the hot oven and bake for approx. 40 min. until golden brown. Leave to cool down for 30 min. afterwards.

Whip cream

  • Add whip cream and sugar to a medium-sized bowl or blender cup and whisk until firm but not butter. Keep in the fridge until serving.


  • Cut the vegan apple strudel into slices and arrange on dessert plates. Serve with whipped cream on the side.
