Sweet melon salad with coriander dressing, tofu and chopped peanuts

We have a delicious melon salad with coriander dressing for you.

This week our recipes is particuarly refreshing and it's all vegan, gluten-free and low carb as well!

Proteins and healthy fats are ensured wit the fried mango tofu and chopped peanuts. Yummi!

  • Coriander20  g
  • Curry-mango tofu2  pcs
  • Peanuts40  g
  • Cherry tomatoes200  g
  • Slicing cucumber1  pcs
  • Cantaloup melon2  pcs

Good to have at home

  • Salt
  • Pepper
  • Olive oil
  • Lemon juice

How to do:


  • Halve the melon and scoop out the seeds with a spoon. Cut the melon into wedges and cut off the peel. Cut the flesh into bite-sized chunks and add them to a bowl.
  • Wash and cube tomatoes and cucumber. Add them to the bowl.
  • Wash, dry and finely chop coriander. In a bowl, combine coriander, a dash of olive oil and a dash of lemon juice. Season to taste with salt and pepper.
  • In a bowl, combine all salad ingredients. Coarsely chop the peanuts.
  • Drain the tofu and cut it into 0.5 cm thin slices. Heat some olive oil in a pan and fry the tofu slices on high heat until golden brown. Drain on kitchen paper afterwards.


  • Add the sweet melon salad with coriander dressing to plates and top with tofu and chopped peanuts. Serve with some freshly ground black pepper.
