Spitzbuben cookies

The festive season is approaching and we have already created a great Christmas Baking Box with 3 delicious recipes for you to bake at home. Our recipe of the week is part of this great box and we are happy to share it with you.

Everyone loves Christmas Cookies! They are essential to advent season and cozy weekends inside with kids, friends and family.

As the traditional recipes come with a lot of refined sugar we have been testing, baking and pondering to improve the classic recipes with healthier ingredients.

The spitzbuben cookies we created do not need much sugar and are topped with naturally sweetened cherry jam. You can use andy other red berry jam instead - we suggest naturally sweetened raspberry jam that you can find in the health food shop of your choice. The cookies are heavenly tender and short, a delicate treat that will even satisfy a gourmand's taste!

Ingredients

  • A package of butter1  pcs
  • A jar of cherry jam1  pcs
  • Eggs1  pcs
  • Spelt flour for baking300  g
  • Ground almonds100  g
  • Ground vanilla3  g
  • Icing sugar150  g
  • Lemon1  pcs

Good to have at home

  • Salt1 pinch
  • Maple syrup30 ml

How to do:

Preparation

  • Soften 200g butter by slightly heating it. In a bowl, combine all dry ingredients except for icing sugar. In another bowl, whisk soft butter, maple syrup, lemon zest, a pinch of salt and egg. Add the butter mixture to the dry ingredients and knead to a dough. Wrap in cling film and let rest for 1 hour in the fridge.

Baking

  • Preheat the oven to 180°C (fan).
  • Roll out the dough on a floured surface until 3 mm thin. Cut out the cookies with a cutter in shape according to your liking. Cut a smaller hole in every second cookie. Transfer to a lined baking tray and bake for 10-12 min. in the oven and remove when they start to brown.

Spitzbuben cookies

  • Spread out the jam onto the cookies without wholes. Top with each with a cookie with a hole and leave to cool down.
  • Sprinkle with icing sugar and store in an airtight container.
