Soba noodle and soy mince stir-fry with chopped coriander

Next week is World vegetarian week, so we decided to show you that soy can be really mouthwatering, and NOT just for vegetarians!

Ingredients

  • A package of Japanese soba noodles1  recipe_unit.
  • Soy mince100  recipe_unit.
  • Shallots1  recipe_unit.
  • Zucchini1  recipe_unit.
  • A bunch of coriander1  recipe_unit.
  • Red bell pepper1  recipe_unit.
  • Eggplant1  recipe_unit.
  • Peanuts15  recipe_unit.
  • 15  recipe_unit.

How to do:

  • Soy mince

    Soak the soy mince for 10 min. in hot water.

  • Soba noodles

    Cook the soba noodles for 4 min. in boiling water. Drain into a colander afterwards.

  • Soba noodle and soy mince stir-fry

    Peel and chop shallot, ginger and garlic. Wash, seed and finely chop chili pepper. Heat some peanut oil in a large pan or wok and sauté garlic, shallot, ginger and chili pepper for 1-2 min. on medium heat. Add the soy mince and fry for 8-10 min. Stir occasionally.

    Meanwhile, clean and cube zucchini, eggplant and bell pepper. Add eggplant and bell pepper to the pan and fry for another 6-8 min. Add zucchini and soba noodles and toss with soy sauce. Fry for another 3-4 min. on medium heat.

    Wash, dry and chop coriander. Coarsely chop peanuts.

  • Serving

    Add the soba noodle and soy mince stir-fry to larger bowls and top with coriander and peanuts. Enjoy while hot!
