Pulled pork with sweet potato fries, homemade mayo and green beans

Pulled pork is an american dish, which is on the uprising in the whole of Europe. You basically cook a piece of pork on low heat for really long, until it nearly falls apart, and then you pull apart with a fork. Hence the name "pulled pork"

Making your own pulled pork is quite time intensive. We asked our butcher to prepare it for you, including a delicious BBQ sauce! So all you need to do is just heat it in boiling water.

Ingredients

  • Sweet potatoes600  g
  • Shallots1  pcs
  • Lemon1  pcs
  • Flat green beans250  g
  • Garlic bulb1  pcs
  • Pulled pork 240g1  pcs

Good to have at home

  • Salt
  • Pepper
  • Olive oil
  • Sweet paprika powder1 tsp.
  • Honey or Maple Syrup2 tsp.
  • Eggs1 pcs
  • Dijon mustard1/2 tsp.
  • Rapeseed oil125 ml

How to do:

Sweet potato fries and homemade mayonnaise

  • Preheat the oven to 200°C (fan oven).
  • Peel the sweet potatoes and cut them into fries-shaped chunks. In a bowl, toss them with a dash of lemon juice, honey, a pinch of salt and sweet paprika powder. Line a baking tray and spread out the sweet potato chunks in a single layer. Transfer to the oven and bake them for approx. 30 min. Turn them once after half of the baking time.
  • Peel and crush 1 garlic clove into an immersion blender cup. Add egg, rapeseed oil and mustard. Place the hand-held blender on the bottom of the blender cup. Pulse until mayonnaise forms and slowly lift the head of the blender. When the mayonnaise is firm enough, season to taste with a pinch of salt and a dash of lemon juice. Keep in the fridge until serving.

Pulled pork

  • Heat a generous amount of water in a larger pot. Add the boil-in bag with the pulled pork to the simmering water with the sealing facing up. Heat the pulled pork for 20-25 min. until entirely warm and tender. Open the boil-in bag with a knife and pour the pork into a large soup plate. Pull it into small pieces by using two forks.

Green beans

  • Clean the green beans and cut them into bite-size pieces. Peel and chop shallot and 1 garlic clove. Heat some olive oil in a large pan and sauté garlic and shallot for 1-2 min. on medium/low heat. Add the green beans and sauté for another 2 min. Add a dash of water and let simmer or 3-5 min. Season to taste with a pinch of salt afterwards.

Serving

  • Arrange pulled pork with sweet potato fries and green beans on plates and serve with homemade mayonnaise on the side.
