Mothers day surprise

We know that for mother's day all you really want to do is relax and let someone else take over your responsibilities for a day.

Give your loved one a wink: print this recipe and let your family shop and cook a delicious crumble for you. It's a really easy and delicious recipe!

And ofcourse, let them clean up the kitchen tehemselves afterwards :-)

The recipe is 100% vegan and free from refined sugar.

Ingredients

  • Rhubarb400  g
  • Mixed berries250  pcs
  • Apples2  pcs
  • Spelt flour for baking150  g
  • Oatmeal90  g
  • Ground cinnamon2  g
  • Almonds80  g

Good to have at home

  • Maple Syrup for the base3 tbsp.
  • Coconut oil100 ml
  • Maple syrup for the crust80 ml

How to do:

The base

  • Wash the rhubarb stalks, discard the ends and halve each stalk lengthwise. Cut into 1-2 cm long pieces. Wash, core and cube the apple. Clean the berries. Combine the prepared ingredients with 2-3 tbsp. maple syrup.
  • Grease an ovenproof dish with some extra coconut oil and add the fruits.

The crust

  • Carefully melt the coconut oil. In a bowl, combine spelt flour, oats, cinnamon, chopped almonds, maple syrup and coconut oil.

Welcome to the crumble!

  • Preheat the oven to 180°C (fan).
  • Crumble the crust mixture over the fruits. Transfer the dish to the oven and bake for 35-40 min. until golden brown and crisp.
  • Leave to cool down a bit afterwards.

Serving

  • Place the dish in the middle of the table for everyone to see and serve while still warm.
