Mini Quiche with brussels sprouts and blue cheese

  • Puff pastry1  pcs

  • A box of 4 eggs1  pcs

  • Gorgonzola cheese1  pcs
  • A head of red batavia salad1  pcs

How to do:


  • Preheat the oven to 200°C
  • Clean and quarter the brussels sprouts. Peel and finely chop the red onion. Heat some olive oil in a small pan and sauté the onions until translucent. Add the brussels sprouts and sauté further for approx. 10 minutes. Sprinkle with salt and pepper afterwards.
  • Break the eggs into a bowl, add a dash of whip cream and season them with ground nutmeg, salt and pepper. Cut the cheese into small pieces and combine it with the eggs. Using a cookie cutter or glass, cut circles from the puff pastry. Use these to line a muffin pan.
  • Place the onion and the brussels sprouts in each pastry base and cover them with the egg mixture. Transfer to the oven and bake until golden brown.
  • In the meantime, clean the salad and prepare a dressing made of olive oil and vinegar. Season to taste with salt and pepper, and fold into the salad before serving.


  • Remove the mini quiches from the muffin pan and arrange them onto plates. Serve with a salad.
