Bring Spring into your kitchen!

Having spent the day out in typical Luxembourgish weather may make you crave for some spring signs inside your kitchen. This week we are having a wonderful family recipe for you, which is both tasty and healthy.

Tender spelt comes along with young spinach, radishes, carrots, goat cheese and sweet raisins. The poppy seed shallot dressing gives an extra twist to this colorful and easy-to-make recipe. Send for your kids, dinner will be ready in 25 minutes!

Ingredients

  • A package of baby spinach1  pcs
  • Farro in a cooking bag 125g1  pcs
  • A bunch of radishes1  pcs
  • Luxembourgish goat cheese in olive oil1  pcs
  • Shallots1  pcs
  • Raisins20  g
  • Poppy seeds10  g

Good to have at home

  • Salt
  • Pepper
  • Olive oil
  • Lemon juice1 dash
  • Maple syrup1 tsp.

How to do:

Farro

  • In a medium pot, bring water to a boil. Add farro in the boil-in-bag and cook for 10 min. Drain afterwards, open the bag with a knife and add the farro to a bowl. Leave to cool down a bit.

Easy farro and baby spinach salad with radishes and goat cheese

  • Clean and finely slice radishes. Drain the goat cheese and crumble into a large bowl.
  • Peel and finely chop shallot. For the dressing, combine shallot, poppy seeds, maple syrup, a dash of lemon juice and a good dash of olive oil. Season to taste with salt and pepper.
  • In the large bowl, combine farro, young spinach, radishes, rasisins and goat cheese. Fold the dressing into the salad before serving.
