Blueberry Macadamia Waffles

This is really something worth waking up to on a sunday morning!

Top the waffles with your favourite marmelade, fresh fruit or eat them plain while still hot!




3 Eggs
120 ml Coconut milk or almond milk
3 tbsp. Maple syrup
3 tbsp. Melted coconut oil
3 tbsp. Coconut flour
1/2 tsp. Pure vanilla powder
200g Macadamia nuts
3/4 tsp. Baking powder
1/2 tsp. Salt
200g Fresh blueberries

How to do:

  1. Heat the waffle iron
  2. Put all the ingredients in a high speed blender except for the blueberries
  3. Blend until the mixture is completely smooth. The consitency should be thick but still liquid. Add more coconut milk if too dry.
  4. Spoon out the batter on the waffle iron close the lid and cook until golden brown. Carefull they don't get too dark! Remove with a wodden spatula and keep warm.
  5. Top the waffles with your favourite fruit topping!
