Amaranth Muesli Bars

These bars a a great snack when you are on the go. Its perfect when you travel and you can wrap them into individual bags or keep them in larger airtight containers for the whole family to share. Just remember, they will get sticky and crumble more if you keep them hot for too long, so make you you store them in a cool environment whenever possible.

Amaranth is a great superfood, filled with fibers, minerals and much more of the good stuff. The combination with cocoa, dried fruits and nuts make the bars filling and very tasty and will keep those little tummies from growling when you are on the road!

A few tips before you start:

  1. Some of the ingredients in this recipe may be new to you. But you can buy all the ingredients in the Naturata supermarkets.
  2. You can add or substitute the nut butter, ground almonds and dried fruits with any other nut butter, nuts and dried fruits of your liking!
  3. If you are travelling with your family, make a 3x larger portion, because believe me, 12 small bars will not last long!

Makes approx. 12 small muesli bars

  • 100g White almond butter
  • 75g Puffed amaranth
  • 75g Maple syrup
  • 60g Roasted and ground almonds
  • 60g Melted cocoa butter
  • 30g Melted coconut butter
  • 25g Chopped, dried cranberries
  • 25g Chopped, dried cherries
  • 1 1/2 tbsp. Cocoa powder (preferebly raw)
  • 1 tsp. Pure Vanilla powder
  • A pinch of salt

How to do:

  1. Melt the cocoa butter and the coconut butter in a small pot on low heat.
  2. Line a rectangular pan with a baking sheet or use 2 silicone bread tins without lining.
  3. Mix all of the ingredients together in a bowl.
  4. Press the mixture into the bottom of the pan or bread tins and press firmly to make as compact as possible.
  5. Cover and refrigerate for at least 1-2 hours or overnight if you can wait this long. Slice into bars and store in an airtight container in the fridge.
